Salmon, spinach & cherry tomato One pan linguine
Good fast food!
When I’ve had a long day, feeling very hungry, I have one mission which is to make a healthy meal in no longer than 30 minutes. Because that’s how long it would usually take for a take away to arrive if I was to order.
This recipe can be altered to suite your choice of protein, so will work perfectly with chicken, beef, turkey or pork. For the vegans and vegetarians this is also perfect, follow the recipe and leave out the fish / meat and can replace with more vegetables.
Feel free to also use your choice of pasta, it doesn’t have to be cooked with linguine.
Overall this is a delicious recipe, it’s simple, requires very little effort and time.

Ingredients
2-3 Salmon fillets
200g Linguine
100g Cherry tomatoes
150g Fresh Spinach
1 Medium onion
1tsp Dijon Mustard
1stp Wholegrain mustard
1stp Black pepper
1tsp Rock salt
2 Cloves of garlic
1tsp Chilli flakes
Preparation
Begin with seasoning the salmon fillets with salt & pepper. Then in a heated and lightly oiled pan fry on each side for 5 minutes. Begin with the skin side down.
In another pot bring salted water to boil and begin cooking the linguine.
Once the salmon is cooked remove from the plan and set aside.
In the same pan add your chopped onions, crushed garlic and sautée for 2-3 minutes.
Slice the cherry tomatoes in half and then add to the pan with onions.
Season with salt, pepper, chilli flakes, Dijon mustard and honey grain mustard, then add the salmon fillets by breaking them up in nice thick chunks. Stir well.
Once the linguine is cooked add it to the main pan with the salmon. Use cooking tongs, gently mix the pasta in ensuring it nicely coated with all the ingredients.
Lastly add the spinach and mix again until it’s wilted.
Taste to make sure it’s to your desired taste, add a little more seasoning if needed then enjoy!
