Vegan Plantain & chickpea burger

Vegan Burger

Serves: 5-6

Time: 45 minutes

This has to be the ultimate vegan burger. If you love plantains and chickpeas this recipe is for you!
It is an incredibly filling burger, and so will you feeling satisfied for a lone time. One great thing about this, is that you can choose to bake the patty into meatball like shapes and have it in a sandwich or even on as part of your salad!

This recipe was made with all natural plant based (real foods) ingredients. Chickpeas are high in protein and fibre. Chickpeas are high in protein and fibre. Plantains also provide a rich source of fiber, vitamins A, C, and B-6, minerals magnesium and potassium. Both of the core ingredients make an excellent replacement for meat in vegetarian and vegan diets.

The process of making this burger is very straightforward, the majority of the hard work is done for you in the food processor.

Ingredients

  • 1 Ripe plantain

  • 400g tinned chickpeas

  • 2 Spring onions

  • 1/2 cup of coconut flour

  • 1tsp chopped fresh coriander

  • 1 Tablespoon coconut oil

  • 1 Tablespoon cumin

  • 1tsp Rock salt

  • 1tsp Black pepper

  • 1tsp Garlic granules

  • 1tsp Chilli flakes


Preparation

  1. Begin my peeling the plantain, then steam it for 5 -6 mins until it’s cooked thoroughly.

  2. Once the plantain is cooked, remove from the pan and place inside a food processor along with the chickpeas, spring onions, coconut oil, fresh coriander and the above seasonings.

  3. Blitz all the ingredients together until it is blended together but still has some lumpy bits in it.

  4. Remove the content of the party from the food processor and place into a large mixing bowl.

  5. Add the coconut flour and mix thoroughly, this should make the content of the patty less sticky and more easy to work with.

  6. Take a flat baking tray and line it with some baking papers.

  7. Using a ring mould full the content of the patty mix into the mould so it’s a nice round and even shape of a burger. Press down and remove the mould and continue to do so until you have used up all the patty mix.

  8. Bake the burgers at 200 degrees for 15 minutes until they begin to turn brown and crispy.

  9. Remove from the oven once they are cooked and begin assembling your burger just how you like it.

  10. I filled mine with some fresh spinach, vegan sriracha mayo? Red onions, avocado and some chilli jam.
