Dairy free banana loaf

This banana loaf recipe is a easy and straightforward recipe that is guaranteed to give you the perfect result. I’ve tried various recipes but this one has been the best one to date.
The use of olive oil over butter gives it a delicate and lighter finish but still keeping the cake very moist.
Having the added blueberries and chia seeds are a great way to incorporate your Omega 3 fatty acids and antioxidants. I’ve also added the perfect egg substitute to make this recipe vegan.

Ingredients

  • 320g All purpose flour

  • 190g Sugar

  • 1/4 Cup of Chia seeds

  • 3 Bananas (2 extra to decorate)

  • 1/4 Cup blueberries

  • 1 Cup of olive oil

  • 3 Tablespoons of almond milk

  • 3 Eggs or 1/2 Cup soy or coconut yogurt for vegans

  • 1tsp Baking powder


Preparation

  1. In a large bowl combine the flour, sugar, chia seed and baking powder together and mix.

  2. Mash 3 bananas and set to one side.

  3. Using a separate bowl add the 4 eggs and beat, add the olive oil, milk and mashed bananas. Whisk until the mixture has formed a runny paste.

  4. Begin adding the combined flour to the egg and banana mix, gradually while folding the batter.

  5. Once all the flour mixture has been to the batter, add the blueberries and mix well.

  6. Add the batter to a 1LB loaf tin, top with 1 banana sliced down the middle.

  7. Bake at 150 degrees for 40 -50 minutes until it’s well risen and golden brown.

  8. Remove from the oven and leave the load to rest for 15-20 minutes before eating it.
