Easy & Delicious Vegan Waffles

Vegan Waffles

These waffles are light, healthy and very simple to make. Made with an addition of rolled oats and chia seeds that give it a subtle crunch.

Chia seeds are a good source of omega-3 fatty acids, fiber, antioxidants, iron, and calcium. A 28-gram, or 1-ounce, serving of chia seeds also contains 5.6 grams of protein. Mixed with water, they can replace egg in vegan cooking.

This recipe is very quick to make, completely vegan and therefore dairy free and eggless. Made with very few ingredients they cook up light & airy and will be ready in 15 -20 minutes. They are perfect served with some fruits a dash of agave nectar (vegan honey alternative) and some coconut cream.


Ingredients

  • 1 cup & half of All purpose flour

  • 1/2 Cup rolled oats

  • 3 Very ripe bananas

  • 2 Tablespoons of chia seeds

  • 1/4 Cup coconut palm sugar

  • 2 Tablespoons coconut oil

  • 1 Cup almond milk

  • 2 Teaspoons of baking powder


Preparation

  1. Place all the dry ingredients (flour, sugar, oats, chia seeds, baking powder) and give it a good mix

  2. Then add 1 cup of almond milk to the bowl and begin to mix.

  3. Peel 3 bananas and mash with a fork until they form a paste consistency with light lumps. Don’t worry about getting it so smooth.

  4. Add the mashed bananas into the mixing bowl and stir until you have a smooth batter.

  5. Turn the waffle maker on. Once it’s ready pour in half a cup of batter on each side of the waffle maker and cook 2-3 minutes until the waffles are golden brown.

  6. Remove from waffle maker and serve warm with fruits, Vegan cream / vegan yogurt and a splash of agave nectar.
