Sweet potato waffles & grilled jerk spiced chicken

Sweet potato waffles
What if I told you that you can enjoy Chicken & Waffles in a healthy way? These waffles are a great way to turn naughty into nice. Waffles don’t have to be full of sugars or eaten with high in sugar processed foods like chocolate spreads etc.
These sweet potato waffles are low carb, gluten free and Keto friendly.
Sweet potatoes are high in both vitamin C and beta-carotene which means they help boost the health of your immun system.
Sweet potatoes also have a high fiber content, which will promote regularity for a healthy digestive tract.
These waffles are simple to make, the recipe is pretty much straight forward and all alternatives provided if you don’t have the ingredients.

Ingredients
2 Small sweet potatoes
1 Cup of coconut flour (I used this flour but you can substitute with any flour you have at home)
1.5 cup of milk (I used almond milk)
1 Egg (Vegans can substitute egg for 1tsp of chia seeds mixed in water)
1tsp baking powder
1/2 cup of grated cheese
Pinch of salt & pepper
Jerk spiced chicken
2 Chicken fillets
Dry Jerk rubb
1/2tsp Garlic granules
1/2tsp Rock salt
1/2 Black pepper
1/2tsp Ground allspice
1/2tsp dried thyme
1/2tsp Onion granules
1/2 Dried habanero pepper
1/2tsp brown sugar
2 stalks of spring onion
Preparation
Firstly season the chicken fillets with all the above dry spices. Massage well into the chicken breasts, set aside and leave to marinade for 10 minutes.
After 10 minutes place on a greased skillet or oven proof pan along with the chopped spring onions and grill for 15 minutes.
Peel the sweet potatoes then grate using a fine cheese grater.
Once the potatoes have been grated squeeze as much water out then place them in a mixing bowl.
To the mixing bowl add the flour, egg, milk, cheese, salt and pepper.
Once the batter has been mixed throughly add 2-3 tablespoons to each side of the waffle griddle and cook for 5-7 minutes.
When all the waffles have cooked, it should be crispy on the outside but soft inside. Plate the waffles up with your jerked chicken breasts and a side of avocado. I added a cheeky sweet chilli sauce but that of course is optional.
