Puy Lentil & Kale warm salad with herb roasted salmon
Puy Lentils

This is a simple and quick way to make a high nutrient lunch or dinner with 3 main ingredients and can be done with a very small budget as lentils and kale are inexpensive. You can chose to buy a cheaper fish, use an alternative low fat protein (chicken breast or turkey) and can even half the cooking time by purchasing cooked lentils!
Lentils are an excellent source of B vitamins, iron, magnesium, potassium and zinc. They’re also a great source of plant-based protein and fiber.
This is another very versatile recipe, you can choose to add or substitute the kale with other dark green leaves, with spinach, rocket, some Swiss chard or a completely different vegetable.

Ingredients
250g Puy lentils
1/2 Leek
300g Shredded Kale
1/2 Brown onion
1tsp Cumin
1tsp Black pepper
1tsp Rock salt
4 Salmon fillets
Seasoning for the fish:
1tsp Rock salt
1/2tsp Dried dill
1/2tsp Dried parsley
1tsp Garlic granules
1/2tsp Black pepper
1/2tsp Chilli flakes
Preparation
Begin cooking the lentils. Chop 1/2 an onion and place in a cooking pot along with the raw lentils and 3 cups of boiling water.
Season the lentils with the garlic granules, ground cumin, black pepper and salt then allow to cook for 25 minutes.
Take the salmon fillets and season with all the above listed dry seasonings. Leave to marinade for 10 minutes then place in the oven at 180 degrees and roast for 15 minutes.
While the lentils are cooking and the salmon is in the oven begin cooking the kale.
Add 1 tablespoon of olive oil in a large pan and heat. Chop your leek finely and shallow fry for 1-2 minutes before adding the shredded kale.Sautée the kale for 3-4 minutes and season with a pinch of salt and pepper.
Once the lentils are cooked drain out any excess water then combine the lentils and kale together in a pan and mix.
Serve along with the roast salmon and a side of avocado or any other side vegetable that you love and enjoy!
