Sweet potatoes

No pasta? Don’t worry let’s use sweet potatoes instead! This is lean turkey mince in a tomato sauce with layers of baked sweet potatoes, let’s call this a sweet potato lasagna with a twist!

This recipe may be one of my more time consuming meals to make but I assure you, the end result is worth it!

This recipe is gluten free, dairy free, and low fat, and high in fibre, it’s perfect for those who follow the paleo way of eating.


Ingredients

  • 500g Turkey mince

  • 1kg sweet potatoes (roughly 5 medium potatoes)

  • 400g chopped tomatoes 

  • 300g red kidney beans (cooked)

  • 2 Tablespoons of olive oil

  • 1 Medium red onion (chopped) 

  • 1/5 Leek

  • 3 Garlic cloves (crushed) 

  • 1stp Black pepper

  • 1tsp Rock salt

  • 1tsp Celery salt

  • 1/2 Curry powder

  • 1tsp Mixed herbs

  • 3/4 Sprigs fresh thyme 


Preparation

1. First add the olive oil to a heated pan followed by the chopped onions, chopped leek, and crushed garlic cloves. 

2. Add the minced turkey and fry for 5 minutes then add the chopped tomatoes, red kidney beans and then season with rock salt, celery salt, mixed herbs, curry powder, and fresh thyme. Pour 2 cups of water and leave to simmer while you prepare your sweet potatoes. 

3. Thoroughly wash the sweet potatoes then slice them into 1cm size medallions, this can be done using a food processor, a mandoline (slicer) or it can be done manually. 

4. Wash the potatoes. Turn the heat off to the mince and then using a deep baking tray to begin to layer the slices of to tray. 

5. Start with a layer of potatoes at the bottom followed by the mince and finish off with 2-3 more layers to cover the mince on top. 

6. Drizzle a little olive oil over the top layer of sweet potatoes followed by a pinch of salt and pepper, cover with foil and bake for 30 minutes at 180 degrees. 

7. After 30 minutes remove the foil and then continue baking the dish for another 15 minutes. 

8. After a total of 45 minutes your dish should be fully cooked. The sweet potatoes should be lovely and crispy at the top and soft inside. 

9. Leave to rest for 5 minutes then serve alongside a green salad.
