Plantain waffles & cajun king prawns
Plantain waffles

This is a simple and relatively quick recipe that can be made in no more than 30 minutes.
These pancakes are dairy free, refined sugar free and high in protein. They are made with wholemeal spelt flour, I prefer to use wholemeal spelt flour because it is higher in fibre. Additionally, spelt contains small amounts of calcium, selenium (Selenium is needed for your thyroid glands, which ultimately control your metabolism) and vitamins B1, B6 and E. Like most whole grains, it is also high in carbohydrates.
These pancakes can be paired with a savoury side like how I have made them. Or you could also go sweet and top some fruits / fruit syrup. Whichever way you decide to have them, they will taste fantastic!
Ingredients
2 Very ripe plantains
1 Cup wholemeal spelt flour
1tsp Baking powder
1 Egg
1.5 cup of Almond milk
1tsp Cinnamon
Cajun prawns:
16 Large king prawns
1tsp Cayenne pepper
1/2tsp Smoked paprika
1stp Garlic granules
1/2tsp black pepper
1/2tsp Dried thyme
1/2tsp Dried oregano
Preparation
Using a food processor place the plantains, eggs and milk then blend until smooth.
Pour the blended plantain into a mixing bowl then add the spelt flour, cinnamon and baking powder, little at a time while gently folding the mixture.
Once your batter mixture has been mixed well and is smooth, you can then begin cooking it in the waffle maker. Scoop 1/4 of a cup of mixture in each side of the waffle pan and cook for 3-5 minutes.
While your waffles are being made you can begin to cook the prawns.
Add 1tbsp of olive oil in a frying and and heat up.
Add the king prawns followed by all the dry seasonings. Give it a good mix / toss around to ensure all the prawns have been coated. Cook for 3-4 minutes until the prawns are golden brown.
When all the waffles have cooked, served with the prawns and garnish with some fresh spring onions and red bell peppers.
