Lean salmon & king prawn burgers

Healthy burgers

Time: 30 minutes

Serves: 4-6 People

This is a fantastic way to satisfy your burger craving without the added guilt. These burgers are lean, low fat and also gluten-free.
This recipe will take. I longer than 30 minutes to prepare, so it’s great for when you have little time on your hands to cook.

Salmon is my go to fish, not just because of the flour but also the nutritional benefits it’s boosts from. We know that salmon is great for providing you with omega 3 fatty acids but it’s also great source of B vitamins, potassium and selenium.
A 100-gram serving of salmon provides 59–67% of the RDI of selenium, a mineral involved in protecting bone health, improving thyroid function, having a good thyroid function is needed for the regulation of your metabolism.

Ingredients

  • 500g Fresh skinless salmon fillets

  • 8-10 Large king prawns

  • 2 Chopped spring onions

  • 2tsp Garlic granules

  • 1tsp Dried parsley

  • 1tsp Rock salt

  • 1tsp Black pepper

  • 1tsp chilli flakes (optional)

  • 1 Egg

  • 1/4 Cup of coconut flour / ground almonds


Preparation

  1. Place the salmon fillets on chopping board and begin to chop them up. Very roughly, it’s nice to have different size chunks in the burger patties.

  2. Take the king prawns and finely dice them as well. Then take both the diced prawns and raw salmon and put them in a large mixing bowl.

  3. Finely chop the spring onions and add them to the mixing bowl followed by all the dry herbs and spices (garlic granules, salt, pepper, chilli flakes, parsley) and massage well using your fingers.

  4. Once all the spices have been added, add one egg and your coconut flour / ground almonds and mix.

  5. Roll them up into patties, drizzle a little olive oil on top then begin to cook.

  6. You can choose to pop these under the grill for 10 min or cook them on a griddle pan for 5 minutes on each side.

  7. Serve with a salad / chips or you can opt to put it in a burger bun.
