One pan shrimp, broccoli & sun dried tomato Pasta

One pan pasta

Serves: 4-6 people

Time: 30 Minutes

This recipe is a ‘I don’t have time to took but I will cook’ kind of recipe. It’s really simple, quick - ready in no more than 30 minutes and will leave you satisfied.
The recipe does not use any dairy or meat based stocked, therefore making it very easy to make if you are a vegetarian or vegan. You can also substitute the prawns for another protein and it will taste just as great.

I’ve chosen to use whole grain pasta, I tend to only buy whole grain for several reasons. Whole-grain pastas contain more natural fibres and micronutrients than their white pasta. This will essentially help control your blood sugar levels, will lower your cholesterol levels as well as improve your immune and brain functions.

Ingredients

  • 400g Wholemeal pêne pasta

  • 200g Raw king prawns

  • 350g Broccoli florets

  • 100g Chopped sundried tomatoes

  • 1 Medium red onion (chopped)

  • 3 Cloves of garlic (crushed)

  • 2tsp Dijon mustard

  • 1tsp Whole grain mustard

  • 2tsp Rock salt

  • 2tsp Black pepper

  • 2tsp Smoked paprika

  • 2tsp Dried parsley

  • Olive oil


Preparation

  1. In a large pan add 2-3 tablespoons of olive oil, set the hob on a medium heat and begin to add the king prawns.

  2. Season the prawns with the smoked paprika, parsley and black pepper. Cook on each side for about 2 minutes, then take it out of the pan and onto a side plate ready to be added back in later.

  3. Continue using the same plan that you fried the prawns in and add a little more oil (about 1 tablespoon) and add the chopped onions, crushed garlic. Allow to sweat until the garlic and onions have become translucent.

  4. To the pan add the 2tsp of Dijon mustard, 1tsp whole grain mustard, chopped up sundried tomatoes, salt and about 1 cup of water. Allow it to simmer for 5 minutes.

  5. While the sauce is simmering begin cooking the pasta. Bring to boil water, add a pinch of salt and add the pasta. Cook for 8-10 minutes until it’s al dente.

  6. Once the sauce has simmered down a little add the broccoli florets, cook for another 3 minutes before adding the cooked pasta and prawns into the sauce.

  7. Gently give the entire content a mix, making sure the pasta is well coated with the sauce. Taste to ensure you have adequate seasoning, add more if needed.

  8. Plate up and enjoy.
