This recipe is filled with a variety of flavours, from creamy to sweetness from the red peppers to a hint of spice from the chilliest. It will leave you wanting more!
The red peppers not only give the sweet touch but also give you the required daily intake of vitamin C! Red bell peppers have just over 3 times the amount of vitamin C that you would get in a standard orange. Perfect for the health of your immune cells.

I served this up with a side of red rice which contains the highest iron and zinc content of all the commercially available rice. It also has a fantastic taste to it.

Ingredients

  • 1kg Chicken thighs 

  • 250g coconut cream

  • 2 Red belle peppers

  • 3 Fresh tomatoes 

  • 1 Red onion

  • 3-4 Cloves of garlic

  • 1.5tsp Dijon mustard 

    Seasonings:

  • 2tsp Rock salt

  • 1tsp Black pepper 

  • 1tsp Smoked paprika

  • 2tsp Dried thyme

  • 1tsp Dried oregano
