Grilled salmon nicoise
This recipe is the ultimate nicoise salad. Grilled salmon with griddled jersey royals potatoes
Tesco jersey royals are delicious, earthy and nutty and one of the traditional foodie signals that spring has arrived. its perfect steamed, boiled or as I have made them, par boiled them then roasted on the griddle pan.
This salad makes a great hearty lunch that is full of flavour and packed with all the good nutrients.
Ingredients
1kg Salmon
1tsp Salt
1tsp Pepper
1tsp Dried parsley
1tsp Garlic granules
1tsp Chilli flakes
450g Tesco jersey royals potatoes
3 eggs
100g green beans
Handful of cherry tomatoes
Handful of Pitted kalamata olives
French dressing
Extra virgin olive
Method
Season the salmon with salt, pepper, garlic granules, chilli flakes and parsley. Allow to marinade for 10 minutes
Chop the jersey royals in half and place in salted boiling water. Boil for 10 minutes.
In a separate pan boil the eggs for 6-12 minutes, (depending on how soft you like the yoke)
Add the Salmon on a griddle pan skin and cook for 5-6 minutes on each side
Once the potatoes have parboiled, drain the water out, drizzle with a little olive oil and place on the griddle pan for 8 minutes or until you have the nice golden charchol marks on the flat side of the potato.
Wash and steam the green beans for 5 minutes
Begin to assemble the salad starting with the romaine lettuce, followed by quartered eggs, the green beans, potatoes, salmon and cherry tomatoes.
Empty some French dressing in a small pinch bowl, chop the olives into small chunks and add to the dressing.
Drizzle the dressing over the salad and enjoy.
