Mango, scotch bonnet & lime grilled chicken

This recipe comes from my love of having sweet and spicy flavours in meats. It’s a very simple recipe that can be used and will work very well on fish also.
I’m a massive fan of mango and it’s one of the fruits I tend to consume on a daily basis. In fact mango is actually known as king of the fruits in some countries and I personally couldn’t agree more. Not only does it taste great (when ripe) but studies have linked mango and its nutrients to health benefits, such as improved immunity, digestive health and eyesight. Mangoes are very high in vitamin C, and one large mango can have up to 67% of the vitamin C required daily intake, which is great for the health of your immune cells.
I must stress that you use good quality ripe mangos to get the best flavours out of this recipe.

Ingredients
500g skinless chicken thighs
1 Medium ripe mango
1 scotch bonnet pepper
1 lime
1 tablespoon brown sugar
1tsp rock salt
1tsp black pepper
1tsp garlic granules
1tsp dried thyme
Preparation
Place the chicken in a large mixing bowl, add the dry spices (salt, pepper, garlic, and thyme) rub into the chicken then set aside while you make the spicy mango sauce.
Peel the mango, place in a blender along with the scotch bonnet pepper and brown sugar. Blend until it turns into a smooth paste.
Pour 3 quarters of the mango paste over the chicken followed by juice of 1 squeezed lime. Massage it into the chicken then leave to marinade for at least 30 minutes.
Place the chicken pieces on a griddle plan ( I used a caste iron griddle pan but a flat baking tray will also do) place in the oven and bake at 150 degrees heat for 20-25 minutes.
Take the chicken out and base it with the remaining mango sauce and a drizzle of olive oil then place back into the oven this time on a grill setting at 190 degrees. Grill for 5-10 minutes until the top of the chicken is golden brown and you can see that the sauce has caramelised.
Serve with your choice of side.
