This recipe is another quick 30 minute hassle free and little effort dinner idea. A salmon tray bake topped red onions, crushed garlic cherry tomatoes and fresh herbs. It’s recommended that you have oily fish at least 3 times a week to get all that good Omega 3 fatty acids.

This is a great way to have your required fish intake, the great thing about this recipe is that it works with all types of fish. I cooked it with various white fishes oily and non oily ones and it taste great every time.


Ive added loads of onion and garlic, because of the health benefits they posses. Onions and garlic are great prebiotic’s boost that support digestive health and improve bacterial balance in your gut. So feel free to add more and so help the health of your gut bacteria.

Ingredients

  • 1kg Side of salmon

  • 1 Large red onion

  • 1 Spring onion

  • 25g Fresh parsley

  • 25g Fresh coriander

  • 400g Cherry tomatoes

  • 4 Cloves of garlic

  • 2tsp Rock salt

  • 2tsp Black pepper

  • 2 Tablespoons of Olive oil


Preparation

  1. Place the side of salmon on the baking tray and season with 1tsp of salt, 1tsp of pepper and rub evenly on the salmon.

  2. Slice the onions, cherry tomatoes, spring onions and place in a mixing bowl.

  3. Finley chop the fresh herbs (parsley and coriander) and add to the mixing bowl, followed by the garlic (crushed), season with salt and black pepper. Add 2tbsp of olive oil and mix.

  4. Spread the tomato and onion mix over the salmon and bake at 180 degrees for 20 minutes.

  5. Serve with some vegetables and your choice of carbohydrates.
