GrIlled prawn & plantain burger

Guilt free burger

This burger is a low fat, gluten free and dairy free way to enjoy one of our favourite comfort foods. The recipe is very simple and you can have this ready in about 20-30 minutes. The flavours filled in this burger will definitely blow your friends and family away.

The burger is a delicate and succulent, it can be enjoyed in a bun or with a simple side salad. however you decide to have it, do make sure to tag me on my instagram and let me know how you got on.


Ingredients

  • 350g Raw king prawns

  • 1/4 Cup coconut flour

  • 1 Ripe plantain

  • 1 red Chilli

  • 1/2 Red onion

  • 2 Spring onion

  • 1 Egg

  • 50g Fresh coriander

  • 1tsp Rock salt

  • 1tsp Black pepper

  • 1 carrot

  • Olive oil

  • Jerk mayo


Preparation

  1. Chop the prawns very finely (or use a chopper) and place in a mixing bowl.

  2. Dice the onions, 1 spring onion and coriander and add to the mixing bowl.

  3. Add the remaining ingredients and mix thoroughly.

  4. Scoop out the prawn patty mix and using your hands mould into burger shapes.

  5. Peel and slice the plantains into medium sized medallions.

  6. Heat a griddle plan and place the prawn patties and plantains to cook for 4-5 minutes on each side.

  7. While the burger and plantains are cooking, shread 1 carrot and 1 spring onion, then prepare your burger base.

  8. Remove the patties and plantain from the pan once cooked and begin to assemble the burger.

  9. Place the burger bun first followed by a layer of jerk mayo, then add the prawn patty, the grilled plantains and shredded carrots & spring onions.
