BBQ sweet potatoes with Jerk mayo

This recipe is a delicious and very simple way to enjoy American sweet potatoes. Often vegetarians and vegans have a very limited choice when it comes to BBQ’s as people tend to not think outside of the box. These potatoes are perfect for a bbq accompanied with good dip and a side salad.
These American sweet potatoes are rich in colour potatoes that boost in a number of health benefits. The sweet potatoes are high in fibre and antioxidant which play a major role in your gut health. The orange colour in the flesh is filled with beta-carotene which is a plant based compound that is turned into Vitamin A in the body. I have paired the potatoes with a delicious spicy but creamy jerk mayo as a dip and the combination is just fantastic. Enjoy the recipe and please leave a comment below if you do give this a try.
Ingredients
3-4 Large Sweet potatoes
1tsp chilli flakes
1tsp rock salt
1tsp dried thyme
Jerk mayo:
3-4 Tablespoons of mayo
1tsp cayenne pepper
1/2tsp ground ginger
1/2tsp onion powder
1/2stp garlic powder
2tsp olive oil
1/2stp brown sugar
1/2tsp dried thyme
1/2tsp ground allspice
1/2 Lemon juice
Preparation
1. Thoroughly wash the potatoes with the skin on and then chop into shapes of wedges
2. Add the potatoes into a boiling pot of water and parboil for 6-7 minutes.
3. Remove the potatoes from the boiling pan and set aside to cool down.
4. Season the potatoes with salt, Pepper and thyme before placing them on a bbq (a chargrill skillet will also work).
5. Cook the potatoes for 3-4 minutes on each side or until you have some nice brown charcoal marks on them
6. Add some Mayonnaise into a small mixing bowl, followed by the rest of the jerk seasoning spices. squeeze 1/2 a lemon juice into the mayo sauce and whisk until smooth.
7. Serve up the bbq sweet potatoes with the jerk mayo dip.
