Spicy king prawn salad

Simple, delicious and quick

The majority of the time, people gravitate to unhealthy foods out of convenience combined with time pressures. This is one of the reasons why I created this blog, to assist people in making healthy delicious meals without having to think about it too much.
This salad is great for a light lunch or a post workout meal. The cucumbers and mixed lettuce leaves have a high water content and so it’s great for those having issues with bloating etc.
The salad also has a generous amount of watercress. Watercress boasts many important vitamins and minerals, including over 100% of the RDI for vitamin K.

Ingredients

  • 1 bag of Florette Classic Crispy salad

  • 350g of King prawns

  • 1/2tsp smoked paprika

  • 1tsp Garlic granules

  • 1tsp Dried parsley

  • 1tsp Chilli flakes

  • 1/2tsp Black pepper

    Honey mustard dressing:

  • 1 Tablespoon wholegrain mustard

  • 2 Tablespoons extra olive virgin oil

  • 2 Tablespoons runny honey

  • 1 Tablespoon of white wine vinegar 


Preparation:

1. Add 2 tsp of coconut oil in a hot pan, begin to add the prawns one at a time.

2. While the prawns are in the pan add the dry seasonings smoked paprika, garlic granules, parsley, chilli flakes, black pepper and toss it in the pan until they are evenly coated. 

3. Drizzle a little olive oil and cook for 2-3 minutes until the prawns are golden brown.

4. Take a small mixing bowl and add all the honey mustard dressing ingredients and beat well.

5. Begin to plate up the salad starting with your Florette salad leaves, some cucumbers prawns and top with some water cress.
