Baked sweet potato slices with bbq garlic & herb salmon

Sweet potato baked slices

Serves 3 people

American sweet potatoes are sweet tasting root vegetables that are delicious and you simply cannot go wrong. Which is the reason why I tend to use these sweet potatoes so much, as well as how how versatile they are. In this recipe I have baked the sweet potatoes in thin slices and not only does it look extremely pretty but the texture you are presented with at the end is amazing. Crispy On the outside and soft and sweet on the inside. This recipe is perfect for lunch and the sweet potatoes go excellent as a side to any bbq on a hot summers day.

The nutritional card at the bottom will give you a snapshot of the nutrients found in this meal. I’ll highlight the vitamins found in the American sweet potatoes. They are high Vitamin C, an antioxidant which may decrease the duration of the common cold and improve skin health. Potassium which is important for blood pressure control. Lastly it contains the mineral Manganese, this trace mineral is important for growth, development, and metabolism.

Ingredients

  • 4 large American sweet potatoes

  • 500g salmon

  • 50g Fresh parsley

  • 50g Fresh basil

  • 50g Fresh thyme

  • 5 cloves of garlic crushed

  • 2 tablespoons of olive oil

  • Salt

  • Pepper


Preparation

1. Wash the sweet potatoes and using a mandolin slicer, slice the potatoes in very thin slices.

2. Place the sweet potatoes in round baking tray, do this in round circular motion to get the rosette effect.

3. Drizzle the sweet potatoes with olive oil, salt and pepper. Place in the oven and bake at 160 degrees for 35 minutes.

4. While the sweet potatoes are in the oven, firstly season the salmon with salt and pepper.

5. Make the garlic and herb base for the fish; finely chop the fresh herbs and add into a mixing bowl along with the crushed garlic and olive oil a pinch of salt and optional chilli.

6. Place the salmon pieces on a bbq griddle and base the salmon with the garlic and herb dressing. Grill the salmon for 5-6 minutes on each side and remove from the griddle.

7. Remove the sweet potato from the oven and serve with the cooked salmon.
