Sweet potato waffles

Waffles

Often we avoid eating some of our favourite foods because they tend to be unhealthy.
These waffles are dairy free, rich in vitamin A, vitamin C and packed with antioxidants you get from the sweet potatoes.
They can be made in no more than 30 minutes, using very little ingredients and requires minimal effort.
The waffles are ideal for breakfast or brunch and goes perfectly with eggs.


Ingredients

  • 2 Sweet potatoes

  • 1 Cup all purpose flour

  • 1 Egg

  • ½ Cup almond milk

  • Pinch of salt

  • 1tsp Black pepper

  • 2 Stalks of spring onions

  • 1tsp baking powder


Preparation

  1. Peel and grate the sweet potatoes. Then using a kitchen towel add the grated sweet potatoes in there and squeeze out all the water. 

  2. Place the sweet potatoes in a mixing bowl  

  3. Add 1 cracked egg, almond milk, chopped spring onions, salt and pepper then mix. 

  4. Add the flour and baking powder, in stages mixing gently as you add them in. 

  5. Heat up your waffle machine, add 2 tablespoons of the batter on the waffle plate and cook for about 5 minutes. Do this until all of the mixture has been used up. 

  6. Serve with a fried egg and a side of avocado.
