Loaded fries

These loaded sweet potato fries are a perfectly healthy ‘cheat’ meal without actually having to cheat. The baked sweet potato fries are loaded with nutrients ( vitamin A, B, C, fiber and minerals), and they’re soo tasty and satisfying, topped with coconut baked king prawns, avocado, chillies and rich kidney beans.

Kidney beans are not only rich in iron but also promote a good digestive health and bowel regularity. They have properties that help maintain healthy bones, teeth and Vitamin K, which helps protect the nervous system from free-radical damage.
I love to add avocado to my dishes, either as a side or a topping! They are beautifully creamy antioxidants rich fruit that is also filled with potassium.

This dish is finished off with a drizzle of sriracha mayo and was an absolute delight.


Ingredients

  • 4-5 Large sweet potatoes

  • 1 avocado

  • 200g kidney beans

  • 1 Red chilli pepper

  • 1tsp Rock salt

  • 1tsp Black pepper

  • 1 Tablespoon olive oil

Baked prawns:

  • 300g King prawns

  • 50g Desiccated coconut 

  • 1 Egg

  • 1tsp Black pepper 


Preparation

  1. With the skin on, chop the sweet potatoes into medium sized fries. Wash then pat dry. 

  2. Place the sweet potatoes on a baking tray, drizzle with a little olive oil, salt and pepper. Then bake for 30 minutes at 180 degrees. 

  3. While the fries are in the oven, prepare the coconut king prawns. In a mixing bowl beat 1 egg, dip each of the king prawns in the egg then cover with the coconut. 

  4. Place the king prawns individually on a baking tray once they have been coated, sprinkle some black pepper and drizzle olive oil over it. Bake for 10 -12 minutes at 180 degrees. 

  5. Once the fries and prawns have cooked begin plating up. Start with the sweet potato fries, followed by chopped avocado, kidney beans and then the baked coconut prawns. 

  6. Garnish your loaded fries with chopped chillies, parsley and a sauce of your choice.
