Ingredients
1kg Raw chicken wings
Dry rub for the chicken:
2tsp Garlic granules
1.5tsp Rock salt
1tsp smoked paprika
2tsp mixed herbs
1tsp black pepper
1tsp chilli flakes
Chilli Garlic topping:
4 Stalks of Spring onions
3 Garlic cloves crushed
1tsp Rock salt
1tsp Birds eye chilli flakes
1table spoon olive oil.
Preparation
Wash the chicken wings and preheat your oven to 150 degrees.
In a small pinch bowl add the dry seasonings together and mix well.
Sprinkle the dry rub over the chicken wings and massage until each wing has a good coating of the seasoning. Then leave to marinate for at least 30 mins.
After 30 minutes place the chicken wings on a flat baking try lines with baking paper and bake at 180 degrees for 30-40 minutes, 15/20 minutes on each side until the wings are golden brown and crispy.
While the wings are baking in the oven add olive oil to a heated pan. Chop the spring onions and add to the pan.
Add crushed garlic, salt, pepper & chilli flakes to the pan and allow it to gently sauté for 5 mins before removing from the heat.
Once the chicken wings are cooked use the garlic and chilli topping to evenly coat the wings.
Enjoy with some baked fries, plantains, rice or simply as they are.
