One pan spiced Sea bream & Veg

This recipe is one of my favourite easy and quick go to’s. I tend to have with with some baked Sweet potatoes or roast plantains. After a long day it’s so ideal when your dinner can be made in one pan, everything cooked at the same time and it’s super convenient because you don’t have tonnes of washing to do as well!

I used sea bream but you can use any fish of your choice, I personally have made this a few times using sea bass and other times with salmon.

I love tenderstem broccoli because it looks more pretty than the ordinary broccoli which sounds soo superficial but I do tend to eat with my eyes. However I think I’m right to favour tenderstem over ordinary broccoli as the tenderstem slightly overtakes broccoli with its health benefits.

Tenderstem has slightly more phosphorus, manganese and calcium than broccoli – all vital for bone health. But it really wins out in the vitamin A stakes, providing almost four times more than broccoli.

With that being said feel free to add additional veggies of your choice if you wish.


Ingredients

  • 2 whole Sea Breams

  • 2 packs of tenderstem broccoli

  • 100g cherry tomatoes

  • 2 medium red onions

Seasoning:

  • 3 large garlic cloves (crushed)

  • 2tsp Rock salt

  • 1tsp smoked paprika

  • 1tsp dried thyme

  • 1tsp dried parsley

  • 1tsp crushed mustard seeds

  • 2tsp chilli flakes

  • 1tsp Black pepper

  • 1tsp onion granules

  • 1tsp Celery salt

  • 3 table spoons of olive oil


Preparation

  1. First clean the fish and score 2-3 times on each side this allows the marinade to fully enter the fish and then put in a large bowl.

  2. Chop the onions in large chunks, separate the tenderstem broccoli florets and add the cherry tomatoes in a separate bowl ready to be seasoned.

  3. In another bowl add all the above seasonings with olive oil and mix well until it forms a paste.

  4. Use the majority of the seasoning paste to marinate the fish and the remaining to lightly season the vegetables.

  5. Place the vegetables first on a baking pan, then top with the fish.

  6. Bake at 200 degrees for 15-20 minutes until vegetables are cooked and the fish is golden.

  7. Serve with your choice of side.
