Papaya & Avocado salad with spicy grilled salmon
Papaya salad
This recipe is a super quick refreshing post work out meal that’s full of flavour and will leave you energised.
A simple raw sweet & savoury salad filled with papaya, avocado, cherry tomatoes and onions. It’s that simple! This meal will be ready in 20 minutes without you having to break a sweat.
Papaya contains an enzyme called papain, which can break down the tough protein chains found in muscle meat. Papayas also contain healthy antioxidants known as carotenoids — particularly one type called lycopene.
What’s more, your body absorbs these beneficial antioxidants better from papayas than other fruits and vegetables. Adding more papaya to your diet may boost your heart health. Studies show that fruits high in lycopene and vitamin C may help prevent heart disease.

Ingredients
3 salmon fillets
Seasoning for the salmon:
1tsp Salt
1tsp Cayenne pepper
1tsp chilli flakes
2tsp Dried parsley
1tsp Dried dill
½ Lemon (squeezed)
Papaya Salad;
½ Medium papaya
2 Avocados
150g Cherry tomatoes
1 Red onion
Handful of fresh coriander
2 Tablespoons of olive oil
Pinch of salt
1tsp chilli flakes
Preparation
Season the salmon fillets with the listed dry herbs and spices. Take half a lemon and squeeze the juice over the salmon fillets and set aside to marinade for 5-10 minutes.
Peel and finely chop half a papaya, 2 avocado, one red onion and place into a large mixing bowl.
Chop the cherry tomatoes into quarters and place into the mixing bowl with the avocado and papaya.
Add a handful of chopped fresh coriander to the bowl and finish with a drizzle of olive oil, salt, pepper and chilli flakes. Gently toss the salad so that all the content is mixed well together.
Heat up a grilled pan and begin to grill the salmon fillets on medium heat. Grill each side for 4-5 minutes.
Once the salmon fillets are cooked, serve along with the avocado and papaya salad.
